Freedom of Peach

Rosé, Ardèche 

100% Cabernet Sauvignon

 

A press direct so no maceration. The fermentation of this juice started very fast and after only 7-8 days of fermentation outside in open fiber tank all the sugar was transformed into alcohol. After end fermentation we transferred Freedom of Peach- into a cuve of INOX, here the wine stayed until the 14th of April 2015, when it was bottled.

Moonologue

Rouge, Ardèche

100% Syrah 

 

All destemmed grapes, 15 days of maceration outside in fibre cuve. After end maceration, only the free run juice of Moonologue was left to age in an oak foudre. The juice from the press of macerated grapes was used to make another cuvée. Moonologue was fermenting and aging in our big foudre until we made the soutirage and bottled the wine the 11th of April 2015.

All destemmed grapes of Syrah, 15 days of maceration outside in fibre cuve. After maceration of the grapes, we wanted to make an experiment and decided to separate the freerun juice from the juice of the press. The freerun juice went into the cuvé Moonologue, the juice from the pressoir went directly in barriques, stayed there for close to two years and became this wine. Si c’est Rare was bottled around the 1st of May 2016.
