50% Syrah 50% Grenache noir

 

One of two wines with the same name. It’s that important the message! Initially did we make 12 different labels one of each of the most spoken languages in the world in that way by every box communicated the message to more than 7,2 billion peoples in their native language. (if we’d just enough bottles for that.) 

All destemmed grapes, harvested one day after the other and followed by 10 days of maceration in fiber tank outside. After décuvage and the pressurage, the wine has fermented and stayed in our old oak foudre until the 4-5th of May 2016, where we made the soutirage and bottled the wine.

Rouge, Ardèche 

20% Grenache noir, 30% Carignan & 50% Cabernet Sauvignon

 

Destemmed grapes of Grenache noir and Carignan that have been macerating in the juice of Cabernet Sauvignon. After just 10 days of maceration in fiber tank outside, we made the décuvage, so pressed the grapes, and filled the wine back into the same cuve outside. Here the wine fermented until the first week of May, where we made soutirage and bottled the wine.

 

Ce n’est pas mon chien

Rouge, Ardèche

100% Grenache Noir

 

Only destemmed grapes that have been in maceration for 8 days in a fiberglass tank outside. After the maceration “Ce n’est pas mon Chien” the grapes were pressed and the wine returned to the same cuve. Here it remained until the 1st of May 2016, where we made soutirage and bottled the wine.

 

 

A kiss & A lover’s lie

Rosé, Ardèche 

100% Cabernet Sauvignon 

 

After a fast press direct the juice went directly from the pressoir into old barriques, where it fermented slowly for 18 months and stayed until we bottled it in the beginning of October 2018. This means the wine stayed a little more than 3 years in barrels, this relatively long time of aging have given us a rosé with very unlike flavors compared to other rosés we have made. A little oxidation, another deep saltiness etc. all qualities of longer élevage and oxidation in barrels.

The Bright Cider of Life

Cider, Denmark 

 

Biodynamic apples from Birkemosegaard in Denmark. Our cidre is made like a pétillant natural. It fermented 14 days in an open tank and then another 3 1/2 months in the bottles. We did the dégorgement of the cider on January 17th, 2016.

Apple varieties are all varieties meant to be eaten (so no real cider apple varieties) Primarily, Ingrid Marie, Rød Aroma and Satana, but also Ahrista, Signe Tillish, Rubinola, Pirouette, Holstein Cox and Gerlinde.

Leaning back in time

Blanc, Alsace 

100% Pinot Gris

 

Two nights of oxidation of the juice after a press direct. We left the juice in a big open container, for the dépôts to fall. Afterwards 6 months of fermentation outside in fiberglass cuve the wine was moved to barrels in the cellar, followed by 21 months of fermentation/élevage in barriques. Bottled in the beginning of January 2018.

Blanc, Alsace

100% Gewürztraminer

 

Like the Pinot Gris we did a two nights oxidation of the juice after the press direct. As we did with the other juice, we left this juice in big open containers, for the dépôts to fall and the fermentation to start in good way. From here the juice was moved to a fiberglass cuve were spent 6 months of fermentation outside. After soutirage we moved the wine into the cellar and left it 21 months in barrels to finish the fermentation and the élevage in old barriques. Bottled in the beginning of January 2018.
